Green Tomato Chutney

• 4 lb green tomatoes, 1/4" dice
• 1 cup golden raisins
• 1 granny apple, diced 1/4"
• 2 cup sugar
• 3 tablespoon diced crystalized ginger
• 4 tablespoon fresh minced fresh hot pepper (such as a jalapeno), or to taste 0R 1 TBLS. RED PEPPER FLAKES
• 1 cup apple cider vinegar
• 1 cinnamon stick
Cook uncovered over medium heat, stirring occasionally. Cook until it reaches the desired jam-like consistency. Reduce heat to low toward the end to prevent scorching. Refrigerate. The vinegar preserves it.
