Whole Wheat Soda Bread

Whole Wheat Soda Bread preheat oven 375° 

 4 cups whole wheat pastry flour 3 tsp. baking soda 2 tsp. salt [optional] 

 1-1/2 to 2 cups water. juice, other liquid 1/4 cup apple cider vinegar 

 Sift/mix flour, soda, salt in large bowl. 

 Combine wet ingredients in separate bowl then add to dry ingredients. 

Do not stir, but gently prod the mixture until it starts to form a ball and liquid is absorbed. The idea is to handle the dough as little as possible so not to stretch the gluten. 

 With floured hands or spatula help firm up the ball and gently coax it to roll out of the mixing bowl onto a prepared pan or cookie sheet.   

 With a knife make a 1 inch deep X across the top [or else the center might not get baked thoroughly]. 

Bake 375° for 50-55 minutes 1/8 loaf = 225 calories using water

above recipe is delightful texture, but tastes too much soda...
let's try something with less baking soda, maybe the sugar will help disguise the taste...
All purpose flour 2 Cup
Baking soda 1 Teaspoon
Sugar 1 Teaspoon
Salt 1/2 Teaspoon
Buttermilk 14 Ounce
Directions
Preheat oven to 450 degrees.
Generously grease a loaf pan with butter or margarine.
In large bowl, mix all ingredients except buttermilk.
Gradually add buttermilk, mixing constantly, to produce moist dough.
Place dough in prepared pan and bake for 30 minutes.
