Butternut Squash Soup


½ butternut squash, seeded peeled, cut in chunks

cover with plenty of water, about 6 cups water.

simmer

add: 
2 tsp. pumpkin pie spice, 
½ - 1 tsp red pepper
1 tsp garlic
1 tsp ginger
½ tsp. salt.
1 tsp. sugar

when chunks are soft, whizz to make a pureé

Add one or all:
1 chopped apple
¼ onion chopped well
1 Tbs. sunflower seeds or other seeds
2 Tbs. dried currants or raisens

Simmer a few minutes and then let rest.
