Hummus

low-fat hummus

-4 cups dried chick peas [1,760 calories]

-5 and 1/2 ounces raw tahini [900 calories]

-2 Tbls. garlic powder [54 calories]

-1 Tbls. red pepper flakes

-1 tsp. salt

-3/4 cup raw apple cider vinegar

Soak peas overnight.  Drain, rinse.  Cook peas to very soft in just enough fresh water to cover.   Add water as necessary during cooking, just enough to keep peas covered.  Mash/whizz while hot.  Paste can be cooked down if you think it is too runny, but consider that when it cools it gets firmer.  Stir in other ingredients.  Makes 3 quarts. [225 calories/cup]
